There’s very little difference between the two words but in the modern world, don’t digitise, digitalise.
Digitising is converting your current systems, processes and data to digital. The move toward a paperless office involves digitising. Put another way the basic data is unchanged in content, just in form. This is still a huge move in the right direction but it does not seek in any way to actually optimise the processes or the data. Done well it will be more efficient but may well not be more effective.
Digitalisation on the other hand involves actually changing (improving) the process to move us closer to our goal. Digitalisation done well should result in reimagining the processes and reengineering them to become more effective.
Efficient individuals and organisations digitise, effective individuals and organisations digitalise.
The moral of the tale is as follows:
DON’T DIGITISE, DIGITALISE.
